  1.                  spicy corn-stuffed tomato salad

  4. 6 small ripe tomatoes
  5. 1/2 c. creamy buttermilk
  6.     dressing
  7. 2 T. snipped parsley
  8. 1/4 t. pepper
  9. dash ground red pepper
  10.  
  11. 2 c. cooked corn kernels
  12. 1/2 c. shredded jack cheese
  13. 1/4 c. chopped green pepper
  14. 1/4 c. chopped cucumber
  15. 1/4 c. chopped onion
  16. lettuce leavesPlace tomatoes stem end down on cutting surface.  Cut into 4
  17. to 6 wedges not quite to stem end.  Spread apart slightly,
  18. sprinkle with salt, cover and chill.  Combine dressing, parsley,
  19. pepper and red pepper.  Combine vegetables and cheese in another
  20. bowl and add dressing mixture.  Cover and chill.  Serve on plates
  21. with lettuce.  Makes 6 servings.
